I don’t think we’re gonna be getting Oscorp till after Secret Wars after the soft reboot, since it will be easier to explain how it’s just in the same universe now like the X-Men and Fantastic Four will most likely be.

I still don't think it's Jean Grey. Why would she be doing villain stuff here, then become a heroine in following films?
I think it may be the Spider Queen, who's now a redhead in the MCU.
