This man is your fun friend from college that you lost touch with ages ago, but he grew up to have a really great life. By some twist of fate you randomly cross paths years later, and it's such a joy to see that the good guy won. Also he now makes pickled onions.

I make red onions every week. But I slice the onion thinly , mix 1 cup of warm water, 1/2 cup of vinegar, one tablespoon sugar, 1 tablespoon salt, pepper and mix that. Pour some boiling water over the onions, mix with water/vinegar mixture over the onions..
They last about 2 weeks refrigerated.
